Apple & Blueberry Pikelets

A great way to include fruit into snacks!

Method

  1. Sift flour and baking powder into a bowl.
  2. In another bowl, beat egg and sugar.
  3. Add apple and milk, mix to combine.
  4. Gently fold in blueberries.  
  5. Heat fry pan and drop tablespoons of mixture onto a hot, lightly greased non-stick frying pan.
  6. Turn over when bubbles start to burst on top.
  7. Cook second side until golden.

  • 1/2 cup Plain flour
  • 1/2 cup Wholemeal flour
  • 1 tsp Baking powder
  • 1/4 cup Sugar
  • 1 Egg
  • 3/4 cup Milk
  • 1 Apple, grated
  • 1/2 cup Blueberries, fresh or frozen
