Apple & Blueberry Pikelets
A great way to include fruit into snacks!
Method
- Sift flour and baking powder into a bowl.
- In another bowl, beat egg and sugar.
- Add apple and milk, mix to combine.
- Gently fold in blueberries.
- Heat fry pan and drop tablespoons of mixture onto a hot, lightly greased non-stick frying pan.
- Turn over when bubbles start to burst on top.
- Cook second side until golden.

You need
- 1/2 cup Plain flour
- 1/2 cup Wholemeal flour
- 1 tsp Baking powder
- 1/4 cup Sugar
- 1 Egg
- 3/4 cup Milk
- 1 Apple, grated
- 1/2 cup Blueberries, fresh or frozen
