Apricot Loaf

Method

  1. Preheat oven to 180°C.
  2. Place the first 4 ingredients in a saucepan and bring to the boil.
  3. Leave to cool and then add the baking soda.
  4. Sift the dry ingredients and add to the apricot mixture until just combined.
  5. Place in a greased 22cm loaf tin and bake for 45-60 minutes or until a skewer inserted comes out clean.
  6. Leave in the tin for 5 minutes before turning out.

You need

  • 1 cup Chopped dried apricots
  • 1/2 cup Sugar
  • 425mL Apricot Nectar (canned or boxed)
  • 30g Margarine
  • 1 teaspoon Baking Soda
  • 1 cup Wholemeal plain flour
  • 1 cup Self-raising flour
