Apricot Loaf
Method
- Preheat oven to 180°C.
- Place the first 4 ingredients in a saucepan and bring to the boil.
- Leave to cool and then add the baking soda.
- Sift the dry ingredients and add to the apricot mixture until just combined.
- Place in a greased 22cm loaf tin and bake for 45-60 minutes or until a skewer inserted comes out clean.
- Leave in the tin for 5 minutes before turning out.

You need
- 1 cup Chopped dried apricots
- 1/2 cup Sugar
- 425mL Apricot Nectar (canned or boxed)
- 30g Margarine
- 1 teaspoon Baking Soda
- 1 cup Wholemeal plain flour
- 1 cup Self-raising flour
