Baked Chicken Nuggets

These chicken nuggets are far tastier and healthier than the usual suspects.  The recipe has been adapted from a favourite Jamie Oliver recipe.

Method

  • Heat oven to 225°C.
  • Put garlic, lemon zest, crackers, canola oil, and parsley into a food processor and blend until it resembles coarse bread crumbs.
  • Cut chicken into 2 cm cubes.
  • Gently pound chicken cubes to flatten slightly.
  • Coat chicken lightly in flour.
  • Beat eggs together.
  • Dip chicken into egg to cover completely.
  • Spread crumbs out on a plate.  Coat egged chicken in crumbs.  
  • Spread out onto a baking tray and bake for approximately 15 minutes until cooked through and golden brown.

Variations

  • These chicken nuggets can be frozen and cooked in the oven straight from the freezer for convenience.

  • 2 Garlic cloves
  • 1 Lemon zest
  • 10 Plain dry crackers
  • 2 Tbsp Canola oil
  • 6 Curly parsley, springs
  • 500g Skinless chicken fillets
  • 1 cup Wholemeal flour
  • 2 Eggs
