Baked Chicken Nuggets
These chicken nuggets are far tastier and healthier than the usual suspects. The recipe has been adapted from a favourite Jamie Oliver recipe.
Method
- Heat oven to 225°C.
- Put garlic, lemon zest, crackers, canola oil, and parsley into a food processor and blend until it resembles coarse bread crumbs.
- Cut chicken into 2 cm cubes.
- Gently pound chicken cubes to flatten slightly.
- Coat chicken lightly in flour.
- Beat eggs together.
- Dip chicken into egg to cover completely.
- Spread crumbs out on a plate. Coat egged chicken in crumbs.
- Spread out onto a baking tray and bake for approximately 15 minutes until cooked through and golden brown.

Variations
- These chicken nuggets can be frozen and cooked in the oven straight from the freezer for convenience.
