Beetroot and Feta Summer Salad
An easy, flavoursome salad that would be great for a school canteen and meets our everyday criteria.
Method
1. Drop snow peas or beans into boiling water for 1 minute to quickly blanch. Drain and cool quickly in ice water.
2. Cut Wattie's Beetroot Slices* in half and set aside. On a serving platter, layer the beetroot, chickpeas, capsicum and snow peas.
3. Drizzle with the Eta Lite & Free Feta & Garlic Dressing (optional). Sprinkle over the feta and pine nuts if wished.
Tips
Assemble the salad just before serving.
Serve as a light meal or as a side salad.

You need
- 100g snow peas or green beans, sliced
- 410g can Wattie's Beetroot Slices, drained
- 300g Craig's Chickpeas in Brine, drained and rinsed
- 1 yellow capsicum, deseeded and cut into strips
- 50g feta cheese, crumbled
- 2 Tbsp pine nuts, toasted (optional)
- ½ cup Eta Lite & Free Feta & Garlic Dressing (optional)
