Baked Filo Samosa
A healthier version of the traditional Samosa. A bit of spice and the crunch of filo - delicious!
Method
- Pre heat oven to 200C.
- Spray a heavy-based pan with vegetable oil.
- Add onion, ginger, garlic, cumin and chilli and stir fry until onion is soft.
- Add potato and water and simmer until potato is soft.
- Cut the filo lengthways into three long strips.
- Place a tablespoon of filling on the top left hand corner of a 7cm square, fold the bottom triangle over the filling. Continue folding the triangle along the filo strip and seal the edge with a little water or spray.
- Place on a baking tray and spray with a little water or oil.
- Bake for about 10 minutes until the filo is golden.
