Baked Filo Samosa

A healthier version of the traditional Samosa. A bit of spice and the crunch of filo - delicious!

Method

  1. Pre heat oven to 200C.
  2. Spray a heavy-based pan with vegetable oil.
  3. Add onion, ginger, garlic, cumin and chilli and stir fry until onion is soft.
  4. Add potato and water and simmer until potato is soft.
  5. Cut the filo lengthways into three long strips.
  6. Place a tablespoon of filling on the top left hand corner of a 7cm square, fold the bottom triangle over the filling.  Continue folding the triangle along the filo strip and seal the edge with a little water or spray.
  7. Place on a baking tray and spray with a little water or oil.
  8. Bake for about 10 minutes until the filo is golden.

You need

  • 250g Onion, finely diced
  • 12g Garlic, crushed
  • 12g Ginger, finely diced
  • 5g Ground cumin
  • 5g Chilli, finely chopped
  • 500g Potato, peeled and diced
  • Water
  • 250g Coriander, finely diced
  • 17 Filo sheets
  • Vegetable oil spray or water
