Banana and date muffins
Makes 10 standard muffins or 36 mini muffins
Method
- Preheat oven to 190°C.
- Place the first 4 ingredients in a bowl.
- Dissolve the baking soda in milk.
- Melt the margarine and golden or maple syrup together in a microwave or in a small saucepan.
- Add soda/milk mixture and syrup mixture with the eggs to the ingredients in the bowl. Do not over-mix as this will toughen the mixture.
- Spoon into lightly oiled or non-stick muffin pans (three-quarters fill). Bake for 15–20 minutes or until a skewer inserted comes out clean.

- 2 cups Self-raising flour
- 2 cups Unprocessed bran
- ¾ cup Dates, chopped
- 3 Ripe bananas, mashed
- 1 teaspoon Baking soda
- 1½ cups Reduced-fat milk
- 50 g Margarine
- 6 tablespoons Golden syrup or maple syrup
- 2 Eggs, lightly beaten
