Beef and Lentil Bolognese

This is a classic bolognese recipe which is well known throughout New Zealand. However lentils have been added to add extra fibre and to lower the cost.

Method

1. Gently saute the diced onion, carrot and celery until soft and lightly browned in a large pot.
2. Add mince and stir constantly to break up and brown evenly.
3. Add all other ingredients.
4. Bring to the boil then reduce heat to a gentle simmer.
5. Simmer gently for approximately 1 hour.

 

You could serve this bolognese on pasta or as a base for cottage pie

You need

  • 35ml canola oil
  • 185g carrot, peeled and diced
  • 575g onion, diced
  • 250g celery, diced
  • 1.5kg lean beef mince
  • 3.75kg canned whole peeled tomatoes, crushed
  • 525g dried red lentils
  • 2g dried mixed herbs
  • 50ml vinegar
  • 625ml water
  • 2g ground pepper
  • 12g brown sugar
