Beef and Lentil Bolognese

This is a classic bolognese recipe which is well known throughout New Zealand. However lentils have been added to add extra fibre and to lower the cost.

Method

1. Gently saute the diced onion, carrot and celery until soft and lightly browned in a large pot.
2. Add mince and stir constantly to break up and brown evenly.
3. Add all other ingredients.
4. Bring to the boil then reduce heat to a gentle simmer.
5. Simmer gently for approximately 1 hour.

 

You could serve this bolognese on pasta or as a base for cottage pie

You need

  • 70ml canola oil
  • 370g carrot, peeled and diced
  • 1.15kg onion, diced
  • 500g celery, diced
  • 3kg lean beef mince
  • 7.5kg canned whole peeled tomatoes, crushed
  • 1.05kg dried red lentils
  • 4g dried mixed herbs
  • 100ml vinegar
  • 1.25L water
  • 4g ground pepper
  • 24g brown sugar
